Scientists Just Invented A Brand New Type Of Chocolate

This is the first new type of chocolate that has been revealed in 80 years - after the white chocolate was invented in the 1930s.

Swiss cocoa giant, Barry Callebaut said the chocolate is made from the ruby cocoa bean and has no berry flavoring or color added.

Milk, dark and white chocolates have divided the loyalty of chocolate fans for decades. Global chocolate market volumes declined 1.5 percent in 2015 and 0.4 percent a year ago, according to Euromonitor. It is not yet known when Ruby chocolate will be available in stores.

Barry Callebaut's global research and development centers in France and Belgium, as well as researchers at Jacobs University in Bremen, Germany, created ruby chocolate. The chocolate, unveiled in Shanghai Tuesday, has a natural berry flavor that's sour yet sweet, according to the Zurich-based company, which works behind the scenes to produce chocolate sold by all the major producers including Hershey Co. and Cadbury.

"Consumer research in very different markets confirms that Ruby chocolate not only satisfies a new consumer need found among Millennials - Hedonistic Indulgence - but also high purchase intent at different price points", said Peter Boone, Barry Callebaut's Chief Innovation & Quality Officer.

Innovations in chocolate often take years because of the complex structures and the challenge of maintaining texture and taste. Those aren't adjectives we'used to hearing describe chocolate, so we're certainly curious.
